From the South of France all the way down to Morocco passing through Italy, Greece and Turkey along the coast on summer evenings, everywhere there are garlands of light, wafting aromas of grilling fish aniseed, and fresh herbs, laughter, urgent voices and gently clicking glasses. The Mediterranean ingredients used in dishes are similar, with local variations and preferences. These recipes are healthy based on vegetables and grains pulses, nut, fruit, simple meat and fish, olive and olive oil.
